Milk is a mixture of many different substances.  When we add acid (vinegar) and heat to the milk, we will be able to separate some of the suspended milk solids from the liquid.  

Filtration is one method of separating an insoluble solid substance from a liquid. Filter paper stops larger particles from passing through but allows smaller particles to pass through.  We use filtration when making coffee with filter paper, or making a cup of tea with a teabag, or breathing air through a face mask to protect us from airborne solid particles.
